Brown Sugar Banana Bread


Ingredients:
4 bananas, very ripened, mashed
1 stick butter (8 tbsp), softened
1 cup light brown cane sugar
2 eggs, beaten
1 tbsp vanilla extract
2 cups all purpose white or whole wheat flour
3 tsp baking powder
1/2 tsp salt


Directions:
Preheat oven to 350 degrees.

Using two mixing bowls, sift together the flour, baking powder & salt, and transfer back and forth (sifting each time) between the bowls, 3x total - the mixture will be nice and light, making the bread less dense.



In a separate mixing bowl combine the sugar and butter and cream together until soft.


Add the beaten eggs and stir to combine. Then add the vanilla extract and mashed bananas to the mixture, again stirring to combine. 





Add the wet ingredients to the dry and mix together, then transfer to a greased bread pan. 



Cook for 55-60 minutes, or until a toothpick when inserted into the middle comes out clean.
